In the Kitch: DELIGHTFUL SUNDAY BRUNCH


As I mentioned before, this past weekend my parents and sister came over for brunch. I love entertaining and only wish we had a slightly larger space for it in our apartment. When serving brunch I usually look for recipes I can make ahead of time (or the night before - like strata!) so that I'm not in the kitchen once my company arrives. So, on Friday night I made these Double Coconut Muffins found on Smitten Kitchen. It was my first time cooking with coconut oil, and I love the moisture and flavor it added! I will say - these are best when eaten fresh.

I also made this Quinoa, Kale and Caremlized Onion Quiche. It did require me to get up a little early to prepare but was totally worth it! The recipe suggests serving it room temp- but I'd have to dissagree and reccomend serving it warm. *sorry I forgot to take a picture of the final product!

I served sausage on the side, and fresh squeezed orange juice mimosas. It was easy, and everyone loved it!
